I normally make bread a couple times a week, but I had made too much bread this week. We needed to use it so french toast was very much the way to go. It was so good, we had it for breakfast and dinner. I do have to say I have discovered the amazingness of pumpkin pie spice, my favorite type is the Trader Joe’s brand, but it is seasonal and I didn’t stock up enough. I am a sad panda.
1/2 cup of milk
2 teaspoons of pure vanilla extract – Don’t be cheap on this!
1 teaspoon of pumpkin pie spice
day old bread – you can get this for cheap at the grocery store
Find a low shallow dish. We have some great Pyrex dishes that are small enough to give me some depth while also big enough to hold the massive homemade bread I make. The 6 cup rectangular dish is the one I use. Mix the milk and beat in the eggs. Then add the vanilla and pumpkin pie spice.
Cut up the bread, it is best if the outside is super crunchy. Soak each piece in the milk/egg mixture, flipping them over so both sides get some of the liquid on them. Heat the frying pan to medium high, oil it with cooking spray or drop a pat of butter in the pan. Cook each side until you get some browning, then serve with real maple syrup. Enjoy the yummy food!
