Oatmeal Chocolate Chip Cookies

One of the things that reminds me the most of childhood is baking cookies. Around the holidays we would bake 20-30 batches of cookies to give away as Christmas gifts. One of my favorite recipes is this oatmeal chocolate chip cookie recipe that my mom got from the nun that taught her Home Economics class in high school. When we found out that Zach couldn’t have soy, I thought it was going to be time to say bye to this recipe, but with a couple changes (mainly lard instead of Crisco) I was able to make it soy free and still delicious.

Ingredients

1 cup lard
1 cup brown sugar
1 cup white sugar
1 teaspoon vanilla
2 eggs
2 tablespoons water
2 cups flour
1 teaspoon soda
1 teaspoon salt
2 cups quick cook oatmeal
1 10 oz bag of Enjoy Life Semi-Sweet Chocolate Chips (These are amazing and you would never be able to tell they are dairy, soy and nut free!)
Directions
1. Preheat oven to 350 degrees
2. Cream shortening, sugar, add vanilla, beat in water and eggs
3. Sift dry ingredients
4. Add dry ingredients to creamed mixture, blend well
5. Stir in (by hand) oatmeal and chocolate chips
6.  Drop on greased cookie sheet 2 inches apart
7. Bake 10-12 mins and cool on a rack
