I am constantly looking for quick and easy dishes for dinner. I buy a huge bag of basmati rice at the grocery store and it makes its way into many of my meals. We both like spicy food and this dish hits the spot with a nice side salad.
For a less spicy version, cut down on the sriracha.
1 cup basmati rice
1 lb chicken cut up to bite sized pieces
14 oz can crushed tomatoes
1 1/2 cups of water
2 Tbsp spice mix
2 Tbsp sriracha
In a sauce pan place the water, crushed tomatoes, sriracha and 1 Tbsp of the spice mix. Heat until boiling. Add the rice and lower the heat to a simmer. Set the timer to 15 minutes and stir every couple minutes.
While the rice is cooking heat a skillet and add the chicken, sprinkle the last tablespoon of spice mix over the chicken. Cook the chicken until it is cooked through.
When there is two minutes left, add the chicken into the rice mixture and stir.
When done, serve with some veggies and enjoy!
